Usually, backyard birds devour all our elderberries. But this year, they left me an entire eighth of a cup (dried)!
So I decided to make a very, very small quantity of elderberry syrup.
- 1:2 ratio [elderberries : water]
add any or all of the following spices: star anise, cinnamon stick, cloves, cardamom pod, ginger, orange peel, nutmeg, ETC.
- bring to boil, reduce to simmer
- wait until mixture cools to room temperature, strain into bottle (I used coffee filters and a funnel)
add 1 part honey (= amount of elderberry)
look how the honey sinks to the bottom!
cap and shake, refrigerate
use however you like
for example, I enjoy putting a nip in a glass of orange juice when I’m feeling under the weather.
apologies to the metric enthusiasts out there, but I have never weighed an ingredient in my life and I don’t intend to start now. happily, this is a very loose and forgiving recipe that will withstand almost as many alterations as one cares to make.
BUT DON’T FORGET TO REFRIGERATE!
